Ingredients (for one tilapia “packet”):
1 tilapia filet
large handful of baby spinach
5 pieces of asparagus, ends trimmed
3 thin slices of lemon
cayenne pepper (optional)
2 15″ sheets of parchment paper
Extra virgin olive oil (EVOO)
Preheat oven to 350 degrees.
Rinse and pat dry your tilapia filet. Generously season it on both sides with Garlic salt, lemon pepper and a tad bit of cayenne pepper.
Tear off one 15 inch sheet of parchment paper. Place the handful of spinach on the bottom, place the seasoned tilapia filet on top of the spinach, then place the 5 pieces of asparagus on top of the tilapia. on top of the asparagus, place the 3 thinly sliced pieces of lemon. Drizzle some EVOO over the top of everything. Lay the other piece of parchment paper over the top and roll up all of the sides to form a large packet. (I had a hard time keeping it sealed completely shut. Do the best you can, but it does NOT have to be perfect.)
Place the Tilapia “packet” into the oven using a spatula. Let cook for about 15 minutes. All of the flavors are going to steam together inside the packet, to make a tender and delish tilapia meal! Remove “packet” from oven. OPEN WITH CAUTION. The steam from the packet will getcha!
